CAROL WEIDEMAN – CHEF LECTURER and PURCHASING CO-ORDINATOR

Carol obtained her Advanced Diploma in Food Preparation and Culinary Arts and a Diploma in Pâtisserie.  She began her career working at Café Chameleon and later Winelands Caterers where she excelled in specialised nutritional diets. In 2007 she  joined the ICA as a chef lecturer. She often graces audiences with her appearances on National Television.

   

NATIONAL CHAINE COMPETITION WINNER

The Regional Chaine Winners competed against each in KwaZulu Natal on the 22nd May 2010. 

Each contestant received a mystery black box with ingredients which they had to set up their own menu and follow through with it.  The ingredients consisted of: Quail, Cape Salmon, Wild Mushrooms

 Congratulations to Stacey Lee Chan for Winning theNational competition. Letitia Prinsloo will accompany her on her travels to Helsinki, where she will  represent South Africa at the International competition. Good luck!

Competition Results: Winner—Stacey Lee Chan (Food Design),1st Runner Up—Wynand Reiman (Singita), 2nd Runner Up—Beau du Toit (Overture)

      

PRINCIPAL DOES IT AGAIN

The Concours National Jeunes des Rôtisseurs Competition was held in Durban on the Friday, 22 May 2010. Letitia Prinsloo was awarded the President’s Medal for her ongoing work of excellence on this  committee.  Mrs. Prinsloo has received various awards and medals over the years for her contribution in the industry.

  

ICA AND SABC2, PASELLA

On a regular basis Pasella would invite the ICA to be part of their TV programme. One of our ICA lecturers Chef Carol Weideman is at ease in front of the cameras by now. Presenters Paul and Dieter with the Pasella crew arrived early morning to start the shoot which took a whole day to complete. The last show the ‘making of cheese soufflé’ was aired on the 26th May at 19:30. The ICA is looking forward to the next shoot.

DISNEY ADVENTURE!

6 May 2010, was a cold, wet winter’s morning, the American Adventure tour Group paraded up Adringa Road to the Apprentice restaurant.

They were welcomed by the Apprentice team and Chef Mark Colebank, whom is demonstrating ‘the making of Koeksisters’.

All 18 Disney Adventurers sat eagerly around the demonstration table as Chef mark started making the koeksisters. Chef called up a young Disney Adventurer “Samantha” for some help up front at the Demonstration table. Laughter consumed us all as we squished our hands into our koeksister recipes and kneaded our dough to perfection.

After the demonstration everyone washed their hands, as it was their turn to  make koeksisters! We saw big, small, huge, tiny and exquisite looking koeksisters being made by our American tourists, even though there was a huge flour fight in-between all the koeksisters. They then handed them over to the ICA Third year students to be cooked and then dunked in the flavorsome syrup to be enjoyed with home made Rooibos Ice tea!

The Event was a complete success and enjoyed by all.

CHEF YOLANDÉ SCHOEMAN- CHEF LECTURER

Saturday, May 1st, 2010

Yolandé received a Diploma in Hospitality Management, and worked at establishments such as the Hilton Cardiff in Wales and Glen Eagles in Scotland. Upon returning to South Africa she completed the three year ICA Higher Diploma in Culinary Arts, Professional Cheffing and Pâtisserie, graduating with Top Academic Achievement. She has since won the 2009 Sanlam Private Investments Innovation Awards.

Yolande says,”It begins with a passion and it is kept alive with hard work!”
