Sticky MannaBrew BBQ Pork Ribs

INGREDIENTS
SPICE RUB
- 30 ml (2 tbsp) MannaBrew Superfood Espresso powder
- 30 ml (2 tbsp) brown sugar
- 10 ml (2 tsp) smoked paprika
- 10 ml (2 tsp) ground fennel
- 10 ml (2 tsp) garlic powder
- 10 ml (2 tsp) onion powder
- 5 ml (1 tsp) ground black pepper
- zest of ½ lemon
RIBS
- 1 rack (500g) pork ribs
- 125 ml (½ cup) red wine
- 125 ml (½ cup) beef stock
- 125 ml (½ cup) MannaBrew Superfood Espresso, strong brewed
- 1 (100 g) medium onion, chopped
- 1 (100 g) medium carrot, chopped
- 3 garlic cloves, chopped
- 4 sprigs thyme
BBQ SAUCE
- 125 ml (½ cup) tomato puree
- 250 ml (1 cup) MannaBrew Superfood Espresso, strong brewed
- 60 ml (¼ cup) brown sugar
- 60 ml (¼ cup) apple cider vinegar
- 30 ml (2 tbsp) honey
- 10 ml (2 tsp) Worcestershire sauce
- 2 cloves garlic, finely chopped
- 5 ml (1 tsp) salt
- 5 ml (1 tsp) ground black pepper
- 5 ml (1 tsp) onion powder
- 5 ml (1 tsp) garlic powder
- 5 ml (1 tsp) mustard powder
- 5 ml (1 tsp) cayenne pepper
METHOD
- For the spice rub, mix all of the ingredients together.
- For the ribs, season the meat with the prepared spice rub, ensuring a generous even coating. Cover and refrigerate for 1 hour.
- Preheat the oven to 200°C.
- Combine the red wine, beef stock, strongly brewed MannaBrew Superfood Espresso, onion, carrot, garlic and thyme in a deep roasting dish.
- Place the ribs in the liquid mixture, cover with foil and roast until fork-tender, 2-3 hours.
- Remove the meat from the cooking liquid and drain on kitchen paper.
- Turn the oven’s setting to grill.
- For the BBQ sauce, place the tomato puree in a saucepan and cook while continuously stirring, 2 minutes.
- Stir in the rest of the ingredients and simmer until thickened, 8-10 minutes.
- Brush the ribs generously with the BBQ sauce and place it under the grill for 4-6 minutes per side until lightly charred.
- Slice the ribs into portions and serve with fries or a salad on the side.
TIP: Instead of grilling the ribs, brush them with the marinade and cook them over medium heat on the braai for 4-5 minutes per side until lightly charred.
