
Apprentice Restaurant
Hylton Espey – Head Chef & Lecturer
Hylton first studied Wine making at the University of Stellenbosch and he quickly realised that his passion
was in the hospitality industry. He soon after that completed a diploma in cheffing at the Institute of Culinary
Arts. Chef Espey completed placements at the Cape Grace, Aubergine and Terroir as part of his culinary training.
After graduation Hylton was appointed as Head Chef at the Five Star Colona Castle Guest House before being
offered a position to work with Mike Bassett at Ginja. Under Chef Espey’s guidance the students at
Apprentice will receive world class training at its best.
Johan Louw – Restaurant Manager Johan completed a Diploma in Sound Engineering and worked in managerial positions in various Cape Town “Hot-Spots” and well know restaurants. He assists in the operation, training and management of the ICA’s busy student operated restaurant.
Hendri Greyling – Restaurant Manager
Hendri graduated with a ND Hospitality Management in 2005. His
career included working at Grande Roche Hotel, D’Olives Restaurant
and the very popular Bella Roma Restaurant in Wellington. He has a
keen interest in wine and in his spare time he referees rugby matches.
