MORE THAN A CAREER CHOICE: WHAT KIND OF CHEF DO YOU WANT TO BECOME?

For many Grade 11 and 12 learners, the middle of the year marks an important turning point.

School holidays offer a welcome opportunity to pause, reflect, and begin finalising decisions about life after school. For students considering a future in the culinary arts, this is also the ideal time to ask a far more important question than:

”Which chef school should I attend?”

Instead, we invite you to ask yourself:

“What kind of chef do I want to become?”

Because the answer to that question will determine far more than where you study. It will shape the opportunities available to you for decades to come.

Today’s culinary industry looks very different from what it did even a short ten years ago.

Many ICA-trained chefs become entrepreneurs, building internationally recognised brands. They develop new food products for leading retailers, they become authors, television presenters, educators, food stylists, wine specialists, hospitality consultants and industry leaders. They travel the world, open businesses, influence food culture and inspire future generations.

The question is no longer whether the industry offers opportunity. Opportunity abounds.

The question is whether your education will prepare you to recognise it.

At the Institute of Culinary Arts, students receive far more than classical culinary training. They develop the discipline, technical excellence and critical thinking skills that enable them to adapt to an ever-changing industry. While the curriculum is vitally important, it is only part of the story.

Just as important is the type of student who thrives at the ICA.

Contrary to what many people believe, the most successful ICA students are not necessarily those who arrive with a former skillset or natural flair.

Succesfsful ICA students are:
* students who stay curious
* students who ask questions
* students who welcome constructive criticism
* students who understand that excellence is built through repetition, discipline and perseverance
* students who are prepared to begin again when something is not yet good enough
* students who never stop learning

The ICA has always believed that technical skills can be taught and culture can be cultivated.

ICA students quickly discover that the school’s standards extend beyond recipes and practical assessments. Respect, professionalism, personal responsibility and attention to detail become part of everyday life.

These are qualities that employers recognise immediately. They are qualities that continue to define ICA graduates long after they leave campus.

If you have been following our recent series celebrating ICA alumni through our unique specialisation fields, you will already have seen where that journey can lead. Our graduates have become internationally recognised chefs, bestselling authors, entrepreneurs, product developers, wine experts, educators, television personalities and business owners.

Although each career looks different, they all began with the same commitment: a willingness to learn, to work hard and to pursue excellence.

If that sounds like the kind of future you imagine for yourself, now is the perfect time to take the next step.

The July school holidays provide an ideal opportunity to experience the ICA first-hand. Join us for our Winter School workshops on 2 and 3 July, explore our campus, speak to our lecturers, ask questions and discover what makes an ICA education unlike any other.

If you are unable to visit in July, we invite you to attend our next Open Day on 12 September, where you can experience our campus, facilities and philosophy for yourself.

Most importantly, don’t wait until the final months of your school year before beginning the application process.
The second half of the academic year fills up quickly with examinations, practical assessments, sport, cultural activities and final preparations for life after school. Starting your application now allows you to make one of the most important decisions of your future with the time and attention it deserves.

Each year, the number of available places at the ICA remains intentionally small. This allows us to maintain the individual mentorship, intimate lecturer-to-student ratio and exceptionally high standards for which the school has become known.

We are not looking for applicants who simply want to become chefs. We are looking for young people who are prepared to become professionals, who are curious enough to keep learning, disciplined enough to keep improving and passionate enough to leave their own mark on the culinary world.

Perhaps the question is no longer simply:

“Which chef school should I attend?”

Perhaps the more important question is:

“What kind of chef do I want to become?”

If you’re ready to begin discovering the answer, we’d love to show you why an ICA education is so much more than a qualification. Explore our website, visit our beautiful campus or contact us for more info.

2027/2028 Applications are now open.
