This specialisation course, available as one of three options to choose from in the third year of ICA’s 3-Year Specialised Diploma, bridges the gap between gastronomy and innovation. Students encounter conceptualisation, sensory analysis, commercialisation, financial viability and packaging development of food products in real-world contexts.
Whether it’s designing a new line of healthy snacks, formulating vegan alternatives, or creating shelf-stable sauces for retail, graduates leave equipped to work in fast-paced environments like food processing, development kitchens or entrepreneurial ventures.
The programme builds on a strong culinary foundation laid over three years, where students master advanced cooking and advanced pâtisserie techniques, food safety, business principles and nutrition. By their third year, they are ready to combine their refined palate and technical expertise with market awareness and practical innovation.
Guided by our expert lecturer and supported by cutting-edge industry professionals, students in the Product Development stream are encouraged to challenge conventional thinking and explore sustainable and responsible food production.
