The Role of Business Skills in Culinary Careers
South Africa’s small business sector employs nearly half of the country’s workforce, and entrepreneurship is increasingly viewed as the driving force behind economic growth.
In the culinary and hospitality world, chefs who combine technical excellence with business acumen are better positioned to thrive, create opportunities and lead their own ventures.
At the Institute of Culinary Arts (ICA), training future chefs goes far deeper than mastering knife skills, flavour balance, or perfect pâtisserie. While technical excellence remains at the heart of our approach, ICA places a strong emphasis on business principles, management and entrepreneurship, equipping graduates with the knowledge and confidence to lead, innovate and – most importantly – succeed in a competitive global industry.
In today’s employment landscape, business expertise is no longer optional. Young chefs must be empowered to innovate and lead. Whether running a bistro, managing a kitchen team in an award-winning fine dining establishment, or overseeing a large-scale food operation, understanding finance, management, supply chains and entrepreneurship within the world of food is what transforms a talented chef into a culinary professional with a sustainable and prosperous future.
ICA’s carefully curated curriculum ensures that students are exposed to these critical skills while developing world-class culinary capabilities through dedicated modules in Business Management and Entrepreneurship in Hospitality, which run alongside Advanced Culinary Training in their third year of study.
Many ICA graduates have proven how essential this combination of mastery and business insight is by building thriving careers beyond the kitchen. Their success showcases how a strong grounding in business principles enables ICA graduates to step confidently into leadership roles.
To name just a few proprietors and business owners who have made their mark in the culinary industry:
These ICA-trained chefs demonstrate that the ability to blend culinary artistry with sharp business wisdom is what truly sets them apart.
This dual focus (creative mastery paired with business insight) empowers graduates not only to build careers for themselves but also to create opportunities for others. The ability to cost recipes, manage inventory, market a product and lead teams with vision and integrity is what sets ICA graduates apart as industry pioneers. They leave our programme ready to think beyond the kitchen, becoming restaurateurs, food entrepreneurs, managers and decision-makers who shape the future of hospitality.
In a world where the food and hospitality industry is constantly evolving, ICA ensures its graduates have the entrepreneurial strengths to thrive in uncertain times, adapt to new challenges and drive innovation. More importantly, they are equipped to contribute to the economy and society by building businesses that employ and inspire others.
At ICA, we build on the necessity for constantly evolving futures, delivering deeply immersive training in business management and hospitality entrepreneurship so that graduates don’t only become remarkable chefs, they become the leaders, business owners, employers and innovators South Africa critically needs.
