AVOCADO BLISS QUICHE

The ultimate weeknight treat! Bursting with a rich bacon, caramelised onion and spinach filling, this dish is topped with crispy bacon for added texture and flavour. Fresh tomato and avocado salsa offer a zesty contrast, while the avocado crème fraîche brings a creamy finish. Not only is it easy to prepare and serve, but perfect for a quick, delicious dinner that impresses with minimal effort.

AVOCADO CRUST 

120 g bread flour

2,5 ml (½ tsp) salt

1 (200 g) ripe avocado, mashed (ice cold) 

QUICHE FILLING 

10 ml (2 tsp) cooking oil

1 (150 g) small onion, finely chopped

6 (210 g) slices of bacon, chopped and pan-fried

a handful of spinach, shredded

3 large eggs

250 ml (1 cup) cream

1,25 ml (¼ tsp) ground nutmeg

salt and ground black pepper, to taste

50 g Cheddar cheese, finely grated   

 AVOCADO CRÉME FRAÎCHE  

1 (200 g) avocado, mashed

250 (1 cup) crème fraîche

15 ml (1 tbsp) fresh dill, chopped

15 ml (1 tbsp) lemon juice

salt and pepper, to season 

FOR THE TOMATO AND AVOCADO SALSA 

200 g cherry tomatoes, finely chopped

1 (150 g) red onion, finely chopped

15 ml (1 tbsp) fresh coriander, chopped

15 ml (1 tbsp) lime juice

salt and freshly ground black pepper, to taste 

TO SERVE 

½ (100 g) Avocado, sliced

5 (175 g) strips of bacon, crisped in the oven

a handful of fresh coriander 

Preheat the oven to 190°C.

For the Avocado Crust

  1. Place the flour, salt and avocado in a food processor. Pulse the mixture until it comes together.
  2. Wrap the pastry in cling wrap and place in the fridge for 10 minutes.
  3. Roll the pastry out onto a floured surface to approximately 3 mm. Line an 18 cm loose-bottomed tart tin with the pastry. Use a fork to dock the bottom of the pastry. Place parchment paper and blind baking beans on top of the pastry, and refrigerate the pastry for 10 minutes.
  4. Blind bake for 10 minutes.  

For the Filling

  1. Heat the oil in a medium pan over moderate heat. Fry the onions until soft and translucent, add the bacon and fry for 5 minutes or until cooked. Add the spinach and stir the mixture until the spinach wilts for about 30 seconds.
  2. Remove the mixture from the pan and allow the mixture to cool.
  3. In a small bowl, combine the eggs and cream.
  4. Season with nutmeg, salt and pepper. 

To Assemble the Quiche

  1. Layer the filling in the prepared crust starting with the  grated cheddar, followed by the onion, bacon and spinach mixture and lastly pour the egg and cream mixture over the filling.
  2. Bake the quiche for 15 minutes or until golden brown & set in the middle.
  3. Allow the quiche to cool. 

For the Avocado Crème Fraîche

  1. Blend all the ingredients on high speed for about 30 seconds or until the mixture is smooth.
  2. Store the mixture in an airtight container until ready to serve. 

For the Tomato Salsa

  1. In a medium-size bowl, combine all the ingredients.
  2. Season the mixture generously with salt and refrigerate until needed.

To Serve

  1. Place generous dollops of avocado crème fraîche on the quiche, followed by the avocado and tomato salsa, crispy bacon pieces and fresh coriander.  

 

Tip

A quiche can be a great way to use up all the leftovers in the fridge. Substitute the filling ingredients with any leftovers you may want to use.
