PB&J

A nod to the classic PB & J sandwich. It is a refined cocktail with macadamia-washed vodka, clarified pomegranate juice and a saline finish. The drink is stirred until chilled and finished with a delicate pomegranate layer.

WINE PAIRING:

MACADAMIA-WASHED VODKA

150g So Natural Macadamia Halves, toasted

700ml vodka

40g So Natural Roasted Macadamia Nut Butter

 

CLARIFIED POMEGRANATE

310ml (1¼ cups / 310g) So Natural Pomegranate Juice

20g sugar

15ml (1 tbsp / 15g) lemon juice

60ml (¼ cup / 60g) milk

 

SALINE SOLUTION

80ml (⅓ cup / 80g) water

20g salt

 

TO SERVE

10ml (2 tsp / 10g) dry vermouth

10ml (2 tsp / 10g) So Natural Orange Blossom Honey

handful ice

1 large ice cube

  1. For the macadamia-washed vodka, combine the toasted So Natural Macadamia Halves and vodka in a container. Infuse, 24 hours.
  2. Add the So Natural Roasted Macadamia Nut Butter and shake well. Set aside for 4 hours.
  3. Freeze overnight until the fat solidifies.
  4. Remove the fat layer and strain through muslin, then through a coffee filter until clear.
  5. For the clarified pomegranate, heat the So Natural Pomegranate Juice and sugar in a saucepan over medium heat until dissolved, 2 minutes.
  6. Remove from the heat and add the lemon juice.
  7. Warm the milk in a separate saucepan over medium heat, 2 minutes.
  8. Pour the pomegranate mixture into the warm milk and allow to curdle, 30 minutes.
  9. Strain through muslin, then through a coffee filter until clear.
  10. For the saline solution, stir the water and salt together until dissolved, 1 minute.
  11. To serve, add 3 tablespoons of the macadamia-washed vodka, dry vermouth, So Natural Orange Blossom Honey, and 2-3 drops of the saline solution to a mixing glass with some ice.
  12. Stir until chilled, 20-25 seconds.
  13. Strain into a whisky glass over a large ice cube.
  14. Gently pour 1 tablespoon of the clarified pomegranate into the glass to create a top layer.

TIP: Pour the clarified pomegranate slowly over the back of a spoon to achieve a clean, defined layer without disturbing the drink.

As part of our annual ICA 3rd year student specialisation project, ICA collaborated with @so_natural_sa (So Natural), a Stellenbosch-based brand known for its locally sourced nuts, artisan nut butters, raw honey, Medjool dates, pomegranate juice and Kombucha Jun.

 

Students worked with the So Natural product range to develop creative recipes that highlighted natural ingredients and product versatility.
