30ml (2 tbsp) MannaBrew Superfood Espresso powder

30ml (2 tbsp) brown sugar

10ml (2 tsp) smoked paprika

10ml (2 tsp) ground fennel

10ml (2 tsp) garlic powder

10ml (2 tsp) onion powder

5ml (1 tsp) ground black pepper

zest of ½ lemon

RIBS

1 rack (500g) pork ribs

125ml (½ cup) red wine

125ml (½ cup) beef stock

125ml (½ cup) MannaBrew Superfood Espresso, strong brewed

1 (100g) medium onion, chopped

1 (100g) medium carrot, chopped

3 garlic cloves, chopped

4 sprigs thyme

BBQ SAUCE

125ml (½ cup) tomato puree

250ml (1 cup) MannaBrew Superfood Espresso, strong brewed

60ml (¼ cup) brown sugar

60ml (¼ cup) apple cider vinegar

30ml (2 tbsp) honey

10ml (2 tsp) Worcestershire sauce

2 cloves garlic, finely chopped

5ml (1 tsp) salt

5ml (1 tsp) ground black pepper

5ml (1 tsp) onion powder

5ml (1 tsp) garlic powder

5ml (1 tsp) mustard powder

5ml (1 tsp) cayenne pepper

  1. For the spice rub, mix all of the ingredients together.
  2. For the ribs, season the meat with the prepared spice rub, ensuring a generous even coating. Cover and refrigerate, 1 hour.
  3. Preheat the oven to 200°C.
  4. Combine the red wine, beef stock, strongly brewed MannaBrew Superfood Espresso, onion, carrot, garlic and thyme in a deep roasting dish.
  5. Place the ribs in the liquid mixture, cover with foil and roast until fork-tender, 2-3 hours.
  6. Remove the meat from the cooking liquid and drain on kitchen paper.
  7. Turn the oven’s setting to grill.
  8. For the BBQ sauce, place the tomato puree in a saucepan and cook while continuously stirring, 2 minutes.
  9. Stir in the rest of the ingredients and simmer until thickened, 8-10 minutes.
  10. Brush the ribs generously with the BBQ sauce and place it under the grill for 4-6 minutes per side until lightly charred.
  11. Slice the ribs into portions and serve with fries or a salad on the side.

TIP: Instead of grilling the ribs, brush them with the marinade and cook them over medium heat on the braai for 4-5 minutes per side until lightly charred.
