ICA-trained chefs continue to lead in the culinary industry
More often than not, the inspiring culinary ventures of ICA-trained chefs can be found on the glossy pages of culinary and lifestyle magazines in South Africa.
Once again, ex-ICA graduates are setting benchmarks in the industry – this time, a couple, both trained at SA’s BEST chef school! Chef Arno Janse van Rensburg (formally from The Kitchen @ Maison) and his wife Liezl Odendaal, recently opened the dramatically elegant restaurant Janse & Co. in Cape Town’s Kloof Street. Described in Elle Magazine as a spot where “magic things (are) at play in the kitchen…”, Janse & Co. boasts a tasting menu where “dishes focus on the ingredient itself”, according to Liezl. She reiterates that it is “not about over-complicating the flavours, but about enhancing the ingredients.”
Culinary respect for each and every ingredient in the kitchen is precisely what students at the ICA are taught throughout their intensive theoretical and practical training.
