ICA looks back at being rated BEST chef school in Africa
Being rated as the BEST in any discipline, takes an incredible amount of hard work, dedication and a constant strive for nothing less than excellent. Osteria Francescana has just been rated the best restaurant in the world. For the second time. What a huge accomplishment for any professional chef!
The ICA has had a long-standing, special relationship with Chef Massimo Bottura and his exquisite restaurant in Modena, Italy. For more than a decade, ICA principal, Letitia Prinsloo, has served on the judging panel for S. Pellegrino’s World’s 50 Best Restaurants and has followed Chef Bottura’s career with keen professional interest. As part of her duties as international judge, Letitia travelled extensively, dining at some of the very best restaurants around the globe, in order to stay up to date with modern culinary trends for the benefit of world-class culinary tuition at the ICA.
To continue the strive for excellence that Letitia has maintained on this platform for so many years, she has contributed her professional votes for the likes of Osteria Francescana, The Test Kitchen and many others on the list, during the last voting round.
Looking back to 2016, the ICA was rated the BEST chef school in Africa and one of the 3 best chef schools in the world. This momentous award was announced just a few days before Osteria Francescana was named the world’s BEST restaurant for the first time and celebrating the ICA’s continuous successes at this esteemed establishment, seemed fitting. Following an inspiring conversation with the master himself, the message was clear:
Massimo Bottura says cooking comes from the heart and that is precisely what makes the ICA stand out above the all rest. Filtering down from the principal, past the lecturers and ultimately to the students as tomorrow’s great chefs. It is evident that the ICA training ethos strongly resonates with what Chef Bottura refers to in his book as “Avia Pervia”, an ancient Latin expression meaning: “Impossible things become possible”.
This expression still holds true for Chef Bottura as much as for the ICA.
