FESTIVE MERINGUE IDEAS

WINE PAIRING:

FRENCH MERINGUE

  • 4 (120 ml) large egg whites
  • Pinch of cream of tartar
  • 250 ml (1 cup/220 g) castor sugar
  • 2.5 ml (½ tsp) vanilla essence (optional)

TO PIPE

  • ICA Christmas tree decoration template
  • Baking paper
  • Large piping bag
  • Star piping nozzle
  • Plain piping nozzle

TO FINISH

  • Ribbon or string to tie and hang on tree
  1. Preheat the oven to 70°C.
  2. Position oven-shelf one below the middle of the oven.
  3. Place the ICA Christmas tree decoration template on a baking tray and lay a sheet of baking paper over the template.
  4. Pour egg whites into a grease-free bowl and whisk on medium speed until frothy, add cream of tartar and continue to whisk on medium speed until stiff peaks form.
  5. Gradually add the sugar while whisking continuously, adding 15 ml of castor sugar at a time, with 30-second intervals in-between additions.
  6. Continue whisking until 2/3 of the sugar has been incorporated and the meringue has stiff standing peaks.
  7. Gently fold in the remaining sugar and vanilla essence using a large metal spoon.
  8. Spoon the meringue into a piping bag fitted with the desired nozzle (either a plain or a star nozzle).
  9. Pipe dots as indicated to form the Christmas tree or Christmas wreath.
  10. Ensure that the dots connect with one another to create individual decorations that can be picked up after drying.
  11. Place the baking tray in the oven and dry/bake until the meringue comes loose from the baking paper when picked up.
  12. Thread a ribbon or string through the opening in the Christmas tree or the wreath and tie it to secure before placing the decoration on the tree.
