A popular quote by Roy L. Smith states that “Discipline is the refining fire by which talent becomes ability” and so it also rings true for the culinary arts.
Consistent with the ICA’s own credo of disciplined culinary professionalism and excellence, the ICA 1st year students recently explored cake making techniques as part of their curriculum. French genoise had to be transformed into a classic chocolate and vanilla gâteau, finished with chocolate work of their own creative interpretation, drawing on skills acquired throughout the year. The true test, is delivering a set amount of products that are consistently exactly the same – demonstrating the discipline needed to produce excellence time after time.
Being located in the heart of the breathtaking Western Cape winelands, it is also an important and constant intention for the ICA to reach out to the broader local community. After producing an array of beautifully created fine pâtisserie products, ICA then donated this delicate handiwork to Horizon House in Stellenbosch, spreading professionally created fine pâtisserie joy to its residents.
