How ICA’s Culinary Ethos Nourishes More Than Just Future Chefs

The Institute of Culinary Arts (ICA) is a place where food becomes a force for good — a place where the act of cooking transforms into a deeper lesson on sustainability, responsibility and community. ICA offers far more than technical training. It offers purpose.

Our social responsibility ethos maintains that every great dish begins with a single ingredient. ICA supplies students with the best ingredients available, all of which are included in tuition fees. This means that students are never asked to reach into their own pockets to buy items for practical class, which means no additional financial surprises! ICA will also never sell students’ practice work to the public for profit in the name of training. Our students are here to learn; that is our priority. Therefore, supplying our students with ingredients sourced specifically for practical classes ensures a level playing field where every student, regardless of background or financial means, works with the same quality ingredients — an essential standard from which to educate world-class chefs.

This decision stems from a deeper understanding of the social and economic realities many South Africans face. In a country where inequality remains a pressing concern, we are deeply conscious of our responsibility not only to our students but also to the broader community. Education should empower, not exclude. By removing the financial barrier and burden of students having to buy their own ingredients, ICA ensures equal access to high-level training for all students.

On campus, sustainability is embedded into every lesson. Students come to understand that a sprig of thyme or a bunch of carrots isn’t just a garnish or a side dish. It’s a product of care and time, and it has true value.

Throughout practical tuition, students are taught how to reduce waste in the kitchen by utilising all scraps in stocks or composting peels, thus approaching food preparation with mindfulness. This lesson speaks to a culture of respect, something that the ICA upholds in all aspects of culinary training.

Feeding More Than Minds

What happens when the lesson is over, the dish is plated, and the taste test is complete?

When our students have finished their practical work and have received their individualised feedback, the remaining ingredients are repurposed to feed the hungry in our immediate community. Through a partnership with a local soup kitchen and shelter, excess meals and produce are distributed to those who need them most.

This initiative not only helps address food insecurity in Stellenbosch but also teaches our students a profound lesson in empathy and community service. They come to see that their skills in the kitchen have the power to transform lives. Certain items, however, aren’t suitable for human consumption; therefore, what doesn’t go into the pot goes into our compost heap, which in turn nourishes our gardens. It’s a full-circle system that reinforces a critical value in today’s culinary world: sustainability is not optional. It’s essential.

ICA’s inclusive ingredient policy and commitment to sustainability ensure that no student is held back by circumstance. Everyone receives the same high-quality tools, the same expert instruction and the same chance to excel, which means learning is focused and fair. This results in confident, capable graduates who are ready to hit the ground running — or rather, cooking!

It’s a model that works. Our alumni have proven this in the culinary world both locally and internationally because they carry with them the values learned at ICA: integrity, creativity, sustainability and social responsibility. At the forefront are graduate names like Peter Tempelhoff, Hylton Espey and Callan Austin – all ICA who take sustainability seriously and lead with purpose.
