Nestled in the heart of South Africa’s breathtaking Stellenbosch winelands, the Institute of Culinary Arts (ICA) chef school has been a trailblazer, shaping the culinary leaders of South Africa for the past 30 years. As the first officially registered chef school in the country, ICA has set the standard and continually raised the bar, proving itself as the premier institution for aspiring chefs.
When ICA was founded three decades ago by Letitia Prinsloo, the vision was clear: to train world-class chefs right here in South Africa. At a time when the idea of a South African institution producing globally competitive culinary professionals seemed ambitious, Letitia’s unwavering determination and foresight laid the foundation for what would become an unparalleled success story. Today, ICA graduates grace some of the finest kitchens around the globe, are at the forefront of innovation in leading businesses and continue to showcase the exceptional training they received.
The achievements of ICA graduates speak volumes about the school’s commitment to excellence. Among its distinguished alumni are names like Peter Tempelhoff, the first South African-trained chef ever to rank as high as number 37 IN THE WORLD and, just over a year ago, received the S. Pelegrino Flor de Caña BEST Sustainable Restaurant in the World Award. Kobus van der Merwe, chosen as private chef for the Prince of Whales during a recent Royal visit to Cape Town, whose restaurant, Wolfgat, was named Best in the World and Hylton Espey, the first South African-trained recipient of a Michelin Green Star for his leading role in sustainable cheffing.
These chefs’ rise to international acclaim underscores the quality of ICA’s training and the institution’s ability to nurture talent that competes at the highest level. Their success stories are just a few examples of how ICA alumni continuously set benchmarks in the culinary world.
The ICA’s curriculum is meticulously designed to combine classic techniques with innovative approaches, ensuring graduates are prepared for the dynamic demands of the global culinary scene. With small class sizes that offer personal tuition of the highest standard, hands-on training, and access to some of the country’s finest produce and wine, ICA offers an immersive and comprehensive learning experience.
This dedication to excellence has earned ICA its reputation as the best chef school in South Africa. It is a place where passion meets precision, and where students are equipped with the skills and confidence to excel on the world stage.
Letitia Prinsloo’s vision has not only come to fruition but has also exceeded expectations. ICA’s 30-year legacy is a testament to her belief in the potential of South African chefs to rival the best in the world. From its humble beginnings to its status as a culinary powerhouse, ICA continues to shape the future of the industry, one graduate at a time.
